Here is a great idea – for parents and kids alike – when you need a good breakfast on-the-go! And these are fantastic with a cup of coffee or your favorite tea…
Ingredients:
3 tbsp granulated sugar
1 cup all purpose flour
1 cup whole wheat flour
1tbsp baking powder
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
1/3 cup butter or margarine
2 eggs, lightly beaten*
1/3 cup milk
1/2 cup raisins, dried cranberries, or other dried fruits, chopped
1/2 cup chopped toasted pecans or walnuts
Preheat the oven to 425° Fahrenheit.
Combine all but 1 Tbsp of sugar, flours, cinnamon, nutmeg, salt and baking powder in a bowl. Cut in the butter with a pastry blender or fork until it’s crumbly.
Lightly beat the eggs, and set 1 tbsp of the beaten egg aside. Blend remaining egg, raisins and milk to the flour mixture and combine gently. (Don’t overmix – it makes the dough tough!) Sprinkle flour on a flat surface. Turn out the flour/egg mixture and knead a few times. After kneading, pat the dough into a 3/4 inch thick circle and divide into 8 wedges.
Place the wedges on a greased baking sheet, brush with the reserved egg and sprinkle with remaining sugar.
Bake in the oven for about 18 to 20 minutes or until golden brown.
To save time, just drop the scone mixture by large spoonful, brush with egg and sprinkle with sugar. Adjust baking time accordingly.
Slather with butter and honey or your favorite jam. Delicious!
*You can substitute ground flax seed (flax seed meal) for the eggs. Use 1 Tbsp of flax seed meal + 3 Tbsp water for each egg. It decreases the fat & cholesterol, and adds fiber, too! Brush the scone tops with milk and sprinkle with sugar instead.
