When I was on Weight Watchers looooong ago, I was always on the lookout for a lower calorie, lower sugar option to satisfy my sweet tooth. I modified this from a recipe I received in a meeting – and have looooved it every since!
This Can’t Be Cheesecake
1 pkg. instant white chocolate pudding mix (can use sugar free)
1 3/4 cup lowfat or fat free milk
1 pkg. cream cheese, softened
1 container cool whip
1 ready made graham cracker crust, baked briefly per package instructions
With a hand mixer, blend pudding mix and milk until pudding begins to thicken. Add softened cream cheese and mix until smooth. There may be little lumps if cream cheese is not entirely softened, but it never mattered to me. Stir in container of cool whip. Fill pie crust and refrigerate until firm.
Serve alone or with sugar free chocolate sauce.
I have also served this in small dishes as a simple dessert with sliced strawberries during summer!
NOTE: I have used the instant cheesecake flavor pudding – and it does not compare in any way to the flavor of the white chocolate pudding mix. You could really use any flavor of pudding that you prefer, so get creative!
