This is still pretty new to me, but I’m pretty positive that Georgie is allergic to Red Dye #40.

Anything that is red or pink probably has Red 40, but not exclusively.  Red 40 is one of the most common dye additives to many common foods  such as chips, crackers, beverages, cheese, chocolate cake mix, even meats and vegetables!

Although we have yet to confirm this with her doctor, and allergy testing for food dyes is very difficult, her behavior after consuming red fruit punch is astonishing.  I had started noticing it in the past few months, and without thinking, filled a cup with 1/2 water and 1/2 red punch.  First thing she did when she sat down at the table to eat was guzzle about 1/4 of what was in the cup.  Within just a couple of minutes – she was OFF. THE. HOOK.

She couldn’t sit still, she was spinning & dancing, she was yelling and jumping, and she acted as if she couldn’t even hear us.  She didn’t eat a bite, even though she hadn’t eaten for hours.  While it could be attributed somewhat to sugar, it is the same kind of behavior that occurs while drinking ANYTHING red – sugar free or not.

So I’m going to do an experiment – at the risk of our sanity – by offering her some sugar free Grape drink mix.  Yep, it contains Red 40.

Anybody out there have any experience with food dye allergies / intolerances?  I’ve just started researching and found a few websites that offer some explanations of other children who experience the same kind of disconnect in behavior after consuming food containing a dye they are allergic to!

Oh, and by the way, according to THIS article, Red 40 has been approved for use by the FDA, but when sprayed on weeds is effective as a PESTICIDE.

I can’t believe Friday is here.  Really!  I woke up thinking it was Thursday, but then I remembered that it was Friday and got my focus!

Yesterday, I had the opportunity to spend several hours with a dear, sweet, godly woman who is quickly becoming a soul sister.  She is a sassy Southern belle who loves Jesus!  We spent FOUR HOURS together (it was only supposed to be about two) and it was awesome.  She asks the best questions and would make a TERRIFIC investigative journalist. =)

So, I had to apologize both to my mother in law and Roy about being SO LATE from meeting with her.  Ack!  I’ll tell you what – when you’re in sweet fellowship, time has no meaning, and that would have been fine if I’d estimated the amount of time closer to what actually happened… lol

We talked about marriage and motherhood – she has 2 adult daughters – and the struggles we’ve had as women.   She taught the class at church through the book, Lies Women Believe, and her personal testimonies really impacted me positively.  And God has given us a chance to get to know each other better, and I’m really thankful to have a godly friend who cares about the burdens on my heart and who shines Jesus out of her life!

I’ve done okay so far this week with the Summer 15 Challenge.  Tuesday I was very conscious about what I was eating – but it wasn’t about the food, because I had done a lesson at The Lord’s Table, and it really stuck with me.  Wednesday – on the other hand – I ate whatever I wanted whenever I wanted.  I hadn’t feasted on The Word like I should have, and it showed!

The lessons through Setting Captives Free – The Lord’s Table are very thoughtful and intent on changing thoughts and habits, more than foods consumed or the calories they contain!  It’s not a weight loss program as so many are – but rather a study of what God says about food and eating, and how to align our thoughts with His.

My biggest goals right now – until I know what is going to happen with my ankle at physical therapy – are to journal what I eat and drink 6-8 glasses of water a day.  I want to journal my eating simply for my own record – and note the kind of day I’m having and see how my eating goes hand in hand with the emotions and events of the day.   That’s an important part of this journey – because as I’m learning, feasting on the Word is more important than the food I fuel my body with…

Maybe that sounds simple but addiction is a false idol, and whether I’m worshiping a golden calf or the Golden Arches, when I’m not worshiping the Lord in every thing I do, it affects my life in every way.

My counseling classes are really good.  I have to say that I’m learning so much from all the counseling courses offered in my degree program – but if you are ever inclined to do your own personal study – I highly recommend Light University, which offers the same courses through certificate programs!  The Extraordinary Woman course has been my favorite, but the Marriage Works course has been really good, too.

And if you are a reader – I HIGHLY recommend the book, Why You Do the Things You Do: The Secrets to Healthy Relationships, by Drs Tim Clinton & Gary Sibcy.  POWERFUL stuff.  Whether you use my affiliate link here, or find this book somewhere else, it is a GREAT book for anyone to read.  It touches on the development of relationship styles from infancy through adulthood, and how the way we relate to others – based on how we view ourselves and others – builds healthy (or unhealthy) relationships.  And it offers suggestions and ideas for how to CHANGE the way you relate to others, when you have learned unhealthy atttiudes and practiced unhealthy behaviors, and how GOD can help you make those changes!

I wanted to repost this again as I am getting ready to launch a new section for my Queen Size Mommy posts – which will center on my food addiction, struggles with eating and weight – and striving for GOOD HEALTH.

One of my favorite summer treats really is ice cream.  I’m a “texture” eater and I love the disparity between the cold ice cream on those hot days that weigh me down with heat and humidity.

When our local “dairy queen” opens up in early spring, it’s a big deal and we all look forward to it.   They serve great coney dogs, blue raspberry slushes and the best Turtle Pecan Sundae ever!

The soft serve vanilla ice cream is layered between swirls of hot fudge and caramel sauce, and interspersed throughout all of it are these bits of toasted, salty pecans.  Topped with big mounds of fluffy whipped cream and sprinkled with more nuts, it’s a mix of taste and texture that is PURE pleasure to my senses…

The other day, as Roy and the girls were waking up from afternoon naps, we were all kinda hanging out and I had my head on Roy’s shoulder.  Somebody said something about being hungry and I said I thought ice cream sounded good.  We kinda just kept chatting in between everybody trying to wake up and watching TV. more…

I have long been a fan of good coffee cake.  Now some folks don’t like it cuz it can be too dry.  And yes, that is an unfortunate occurrence with coffee cake, but even when a tad dry, served alongside coffee, it can be so Gooo-oooo-OOOO-ood!

What about Peanut Butter Coffee Cake?  How does that sound?  I think it sounds super yummy and wanted to share the recipe link with you. =)  It has rolled oats (not instant) which add some fiber and additional benefits – and I love oatmeal…  I may have to try this sometime.  I bet it would be really yummy with a slathering of homemade Strawberry Freezer jam, what do YOU think?

Or how about this idea for your next lunch or picnic.  You want your kids to eat fruit – so offer them this dip as added incentive:

1 small jar marshmallow fluff + 1 can whipped strawberry ready-to-spread icing.

Just mix and serve with a wide variety of fruit.  It’s obvious that you couldn’t serve this every day to your kids – but for a special treat in summer, it’d be better than ice cream and they’d be filling up on fruit instead of a lot of junk!  Makes for a terrific treat!

I’m a pasta salad fan, too.  Anybody got a GREAT pasta salad recipe you can share?

One of my favorite pasta salads of all time is from my friend Sheen, who lives in Missouri.  Several of us gals from work would often eat this on a Saturday evening while enjoying the shade on her back patio.  It’s tasty!

Sheen’s Pasta Salad Italiano

Rotini pasta, cooked and drained (and you could use whole wheat!)
Diced ham – or in bite sized pieces
Mozzarella or Provolone cheese, diced
1 bag frozen Italian vegetables (thaw by rinsing in a strainer under hot water for a few minutes – and rinse with cold – no need to cook them)
1 bottle of your favorite Italian Dressing

Parmesan cheese for garnish

Mix all the ingredients in a bowl and allow to chill for at least 1 hour.  You can add the Parmesan cheese before or save it just for a garnish.  You can also add other favorite ingredients like sliced black olives, vary the cheeses, add some diced salami – go with the things you & your family love.  You can use less dressing – or more – depending on your family’s preferences.  You can’t hardly mess this recipe up and can make it as fun & lively as you’d like.  It’s a DELICIOUS, well rounded meal and really satisfying on a hot summer night!

With all of the diets and programs out there for us to choose from, it can be hard to know which one “really” works for you.  If you’re like me, you’ve probably tried what seems like a zillion different diets and eating plans, weight loss groups and clubs, and still struggle with food and exercise – and losing weight.

Although losing weight can make you healthier, if losing weight is your GOAL, that may be part of the problem!  Weight fluctuates – especially for women – from week to week sometimes, and maintaining a specific number on a scale can really be frustrating.

Understanding that FOOD IS FUEL for the body, and learning how your body uses that fuel, or how your body stores that fuel – is really essential to finding Good Health. While reading The Sugar Solution, and starting to dig into The Maker’s Diet, it seems to me that the only effective goal that seems to really work for people is focusing on GOOD HEALTH.

How you feel.  How you act.  Your energy level.  And yes, the new wardrobe that often goes along with this.

Focusing on fitting into some “ideal” guideline that someone else created for you can be really difficult.  Focusing on how you FEEL when you wake up in the morning, and whether or not you struggle with aches and pains, mental fogginess, a continual rollercoaster of emotions, diabetes, high cholesterol, high blood pressure, migraines – tends to bring things into perspective.  Would you agree?

While I was pregnant with Georgie, I only brushed up against the Glycemic Index in a vague kind of way.  But now, as I’m reading more about it, I see what a valuable tool it can be.

NewLowGiLogoTaking a look at the Glycemic Index, and understanding how certain foods may elevate or stabilize the blood sugar levels in your body, can also help you understand why – at times – you feel more crummy than others.  But learning something new, like how to use the Glycemic Index, doesn’t have to be difficult.  And the more you understand how food is supposed to FUEL your body, rather than how it feeds your soul, the more you understand how and why you may feel the way you do.

This is the journey I’m undertaking.  Writing about my food addiction recently, here and here, really turned something on in my brain. (All right Peanut Gallery, have at it…)

We wonder why one diet doesn’t work for everyone?  Well, its because we each have our own individual chemistry and biological makeup.  Some bodies require more protein, or more carbohydrates, and one particular eating plan isn’t going to fit every single person.

Paying attention to what you eat – and then how it makes you feel physically – can, with the help of the GI, understand which foods fuel your body more efficiently than others.

Does that seem too simple?  So simple that it should have made the headline news?  I know!!!  Learning how your body reacts to certain foods may be a key to helping you move closer to GOOD HEALTH and MORE ENERGY.  Its probably not about combining foods, or avoiding foods altogether.  It’s about balance and learning how your body works.

The Glycemic Index is online.  You can learn about lactose intolerance, how to compare foods and learn to make better choices for eating, and about specific food “values” and about eating GOOD foods that don’s spike your blood sugar, leading to a crash – making you feel all kinds of crummy and irritable…  You can learn to FUEL your body in a way that helps you lose weight and maintain a balance of blood sugar, leading to better health for your body all the way around.

If you want to know how and why the GI works, I do recommend you pick up a copy of The Sugar Solution – from your library or local bookstore – for more details about how blood sugar fuels your body and how too much sugar makes you sick, whether or not you are diabetic or have any kind of sugar concerns.

The rise of obesity and diabetes in our country is staggering.  We’ve seen the news reports.  And maybe for you it’s very personal and difficult.  Maybe, like me, you’ve been obese for more than a decade, and it doesn’t seem like you will ever feel GOOD again.

But, I can tell you from experience with eating differently during my pregnancy with Georgie, that a few small changes can make a world of difference, and learning how to use the GI to guide your eating, may be the difference between feeling good and feeling crummy – and even the difference between life or death!

garden Do you have a green thumb?  A Brown thumb?  A Black thumb?

Do you even attempt to garden or do you leave it to the “experts” you know?  I enjoy gardening as a hobby.  I may not take it seriously enough, and that’s why I’m posting this.

I tend to take a rather nonchalant view of my gardening.  Our flowers out front are in a very large haphazard, free-flowing form and they are just BEAUTIFUL!  For vegetable gardening, I’m very serious about getting the dirt prepared and planting according to the instructions on the seed packets or seedling containers.  But then I see these gardens packed to the brim with plants bearing large vegetables or flowers and think – “Why Didn’t I Do That?”

For my vegetables, I have a raised bed.  My husband and dad built it for my back yard.  I have 4 large squares allowing me to separate varieties as necessary, and I don’t really take advantage of the space and need some help.  We LOVE our tomatoes – and this year, I think I might even be brave enough to attempt some canning (if my friend, Kelly, is willing to guide me).  Here are the things we love:

Lettuces
Tomatoes
Garlic
Chives
Zucchini
Sweet Peas

We’d also like some herbs, and while I love growing them, the harvesting & drying has me a bit intimidated.  I’d like to grow some lavendar, chamomile, peppermint and lemon balm and try again to make my own herbal teas.

Honestly, we’d love to have some berries too.  I’d love some raspberries or blackberries, but have only ever picked them in the wild or in a commercial patch.  I love homemade jam and would love to make some of our own.  We have enough back yard to have a good patch, but I’ve seen some overgrown monstrosities that I want to avoid…

We live in ZONE 5 for planting, so I need to get my garden plan together and get some seeds started soon.

If you are an experienced gardener, what can you advise???  Do you have experience with square foot gardening?  Herb gardening?  Berry plants?  Canning?

Any recommended varieties for good production?  Any tips or advice for taking advantage of long-term storage methods?  Any books you’d recommend?

I just threw it together the other night – and it was SOOOO good.  I’m all for fast and easy, and this did the trick!

My Best Lasagna

1-16 oz box lasagna noodles, uncooked
1 jar Spaghetti sauce
1 lb ground beef, cooked and drained
1-15 oz. can tomato sauce
1 16 oz container ricotta cheese
1/2 cup grated parmesan romano cheese blend
2 tsp. garlic & herb seasoning
3 cups shredded mozzarella

1/2 cup water (optional)

Preheat oven to 375 degrees.  Spray 9×13 pan with fat-free cooking spray.

In medium bowl stir together spaghetti sauce, tomato sauce, and ground beef.  In another medium bowl, blend together ricotta cheese, parmesan and garlic & herb seasoning.

Spoon about 1/2 cup of beef mixture and spread in bottom of plan.  Place first layer of uncooked noodles to cover bottom of pan.  Spread with 1/3 of ricotta cheese mixture, then 1/3 of remaining beef mixture, and 1 cup mozzarella cheese.  Repeat layers twice.  Pour 1/2 cup of water around edges of pan.  You can sprinkle on extra parmesan if you’d like.

Cover with aluminum foil (spray lightly with cooking spray to avoid sticking), and bake for 45 minutes.  Remove foil and bake an additional 10-15 minutes (depending on how well you like your noodles & cheese done).

Allow to sit for at least 5 minutes before cutting into portions.

*FYI – you can use whole wheat noodles, ground turkey (or skip the meat altogether if you want) to improve some of the nutritional value.  If I’d thought about it, I would have thawed out some frozen spinach yesterday and added it to the ricotta cheese mixture, but didn’t have time when I came to putting it together…
