I just threw it together the other night – and it was SOOOO good.  I’m all for fast and easy, and this did the trick!

My Best Lasagna

1-16 oz box lasagna noodles, uncooked
1 jar Spaghetti sauce
1 lb ground beef, cooked and drained
1-15 oz. can tomato sauce
1 16 oz container ricotta cheese
1/2 cup grated parmesan romano cheese blend
2 tsp. garlic & herb seasoning
3 cups shredded mozzarella

1/2 cup water (optional)

Preheat oven to 375 degrees.  Spray 9×13 pan with fat-free cooking spray.

In medium bowl stir together spaghetti sauce, tomato sauce, and ground beef.  In another medium bowl, blend together ricotta cheese, parmesan and garlic & herb seasoning.

Spoon about 1/2 cup of beef mixture and spread in bottom of plan.  Place first layer of uncooked noodles to cover bottom of pan.  Spread with 1/3 of ricotta cheese mixture, then 1/3 of remaining beef mixture, and 1 cup mozzarella cheese.  Repeat layers twice.  Pour 1/2 cup of water around edges of pan.  You can sprinkle on extra parmesan if you’d like.

Cover with aluminum foil (spray lightly with cooking spray to avoid sticking), and bake for 45 minutes.  Remove foil and bake an additional 10-15 minutes (depending on how well you like your noodles & cheese done).

Allow to sit for at least 5 minutes before cutting into portions.

*FYI – you can use whole wheat noodles, ground turkey (or skip the meat altogether if you want) to improve some of the nutritional value.  If I’d thought about it, I would have thawed out some frozen spinach yesterday and added it to the ricotta cheese mixture, but didn’t have time when I came to putting it together…

I can remember – a couple of decades ago (ouch! that hurt!) that the big focus on being “healthy” was about feeling the burn and losing weight and being skinny.  Emphasis was placed on presenting an hourglass figure (ginormous shoulder pads, remember?) and highlighting your cheekbones and lowlighting your waddle area to produce a thinner face effect.

Anybody else remember that?

It was about counting calories, avoiding fat, eating lettuce and eggs for lunch and drinking more water than a camel could store.

While some of these points were right on, many of them were focused outwardly.  It was solely about the appearance.

Fast forward a few decades later, and much has been discovered about the real effects of Good Health and Wellness.  It isn’t just about the number of calories consumed in a day.  It isn’t about the 3 hours spent sweating away at the gym.  It’s about finding a BALANCE in what we eat, what we do, and what we think – which ultimately affects how we feel.

While the gimmick diets continue – and the supplements promising quick weight loss appear practically every week – there is a sense of understanding that the WHOLE person is part of Good Health and Wellness.

While the foods we eat and while the activities we participate in absolutely affect us physically – they can also affect us emotionally and mentally.  And here is where the balance is required.

So how do we find balance?

Whole foods. Whole foods, which have undergone little refinement or processing, are essential for one’s well being.  Vegetables and fruits, especially organic (because they have not been treated with pesticides or poisonous fertizilers) are an essential part of good health.  Butter – not margarine – is a good fat because it has fewer synthetic ingredients.  Virgin Coconut oil is better because it is available in an unrefined form. Whole grain items – bagels, breads, pastas, etc. – offer more bang for the buck in that the carbohydrates require more energy to break down in a less refined form, allowing your body to burn more and store less!  Organic Honey and Stevia leaf, used for sweetener, are better for the body because they are in a natural state which the body can use more readily and don’t provide toxins for the body to store…  (We’ll talk about organic items more tomorrow…)

Proteins, Carbs, Fats. Yep – fat is a necessary part of good health.  GOOD fat.  Each of these nutrients are essential for good body health.  Protein provides energy for muscles and is a building block for our body.  Carbohydrates provide fuel for longer-term, and fats are essential to keep the brain and body structures functioning properly.

Portion Size. Aha!  Here it is!  It’s not that baked potato with a little butter and sour cream that are bad for you – it’s the fact that the baked potato weighs 16 ounces, is slathered in 1/4 cup of butter, and has 1/4 cup of sour cream on top…  Learning proper amounts and sizes is a BIG part of eating healthy.  More on that to come…

Exercise. No, no, no – put away the 3 hour aerobics video.  Who can manage that every day?  Even the folks on The Biggest Loser – after their time on the ranch – understand that in the REAL WORLD, exercise is something that must be scheduled and maintained without completely consuming their lives.  This, again, is about balance.  And while a 30 minute workout is really good for you, if its not possible for whatever reason, break it down into 3-10 minute sessions of walking, light weight training, and strengthening exercises.  Movement is required for the body’s health – or else we’ll all end up looking like the folks on Wall-E…   ALWAYS consult a physician before beginning any exercise program.

Relaxation. This is a SERIOUS part of good health.  Stress is a major contributor to heart disease, high blood pressure, diabetes, and other serious health conditions.  How many of us honestly take time to RELAX on a daily basis?  Weekly?  Monthly?  Whether you learn to meditate on Scripture, participate in a Yoga class, or find other ways to relax, it is absolutely a necessary part of our good health and WELLNESS.

Sleep. My favorite.  And my most sought after.  Sleep is a NECESSARY and CRITICAL part of good health.  Studies have shown that a body put on serious sleep deprivation can eventually die.  Our bodies were made to be active and move, but GOD Himself rested on the 7th day of Creation – and its not because HE was limited in any way.  He was showing us the NEED for rest.  And our brains – if no other body parts – require adequate sleep to function properly.

These are just starting points, and I’ll address a few things in more detail tomorrow, and share some great resources to get you on the right track to Good Health and Wellness.

Today – my hubby is home and we are going to spend a lot of time together today.  Curly made breakfast this morning (PB&J) and now Roy & I are enjoying a cup of coffee together.  My cough is FINALLY letting up – after feeling like I broke a rib or two yesterday…  Yes, I exaggerate.

As if we need a reason to drink hot tea!!!  It is only in the 20’s and snow is falling hard and fast.  Be it tea or coffee, drinking something HOT is certainly a welcome choice right now.  While I got out with the girls only once to play in the snow (and it was actually raining on Christmas Day here), it was a really fun time and we were plenty cold when we came in.  This week, we may actually get snowed in if the snow falls the way they’re predicting!

It’s the perfect time for Hot Tea!!!

Over the holidays, I took to pouring tea from a teapot.  Normally I just heat my water in the tea kettle, pour it over a tea bag and I’m good to go – but I thought that it might be a nice change of pace to actually pour from one of my teapots and enjoy a few cups of tea rather than just one.

It was really nice.  It didn’t change the flavor of the tea, and I didn’t use a fancy porcelain teapot or china tea cup – but the ability to dress it up just a tiny bit did lift my spirits and made the whole experience “fancy.”

Sometimes I need Fancy…

Yesterday I wrote about the childhood Christmas traditions I celebrated with my family. Today I’m writing about my Christmas remembrances as a teenager…

As we got older, of course my mom was able to incorporate us into some of the holiday preparations – and this is when Christmas REALLY got fun for me.

Through the years, my mom had collected BOXES and boxes (and boxes) of Christmas decorations and collectibles that always came out as we began decorating for Christmas.  The disorder and chaos (and our intense enthusiasm) often drove my dad out of the house!  We would begin opening boxes and talk about the candles that mom got from “so and so” that I didn’t remember seeing before because she received them just last year.  Or finding the ornaments and decorations my brothers and I made as a child and how special they still were to my mom and how they would find a place of honor among the decorations.

The years that mom let my brothers and I have free reign with the Christmas decorations were so much fun.  On some levels it gave her more time to spend in the kitchen – but I’m sure it was still crazy-busy for her because we’d be trying to do 3 things at once!

We ALWAYS put the tree up the day after Thanksgiving.  That was the beginning of the Christmas season for us.

My brother Dan was so talented, and the year he painted a huge Christmas display on our front window was so awesome.  I got to put out all the candles and knick knacks and collectibles as I packed away our everyday things.  One box at a time – each new box revealing treasures and trinkets that added to our Christmas festivity!

Getting to help make the Buckeyes, English toffee, Monster cookies, Haystacks, decorated Sugar cookies, Chocolate-Dipped Ritz & Pnut butter cracker sandwiches, White bark pretzels, Fudge, Church window candy, Graham cracker cookies, Date cookies, and more – oh was THAT great!!!  My mom kept cooking and baking and pulling out more recipes – and our freezer was PACKED full of sweet, sugary, chocolatey goodness.  Sometimes we’d plate them up immediately and take them in boxes to church to pass out to our friends.  We’d have plates of goodies for neighbors, too – and of course, we’d sneak a few goodies every chance we got!  Being part of the baking & cooking was great fun for us and I really learned to love baking during these times!

When we had the chance to visit my grandparents – who lived in New Mexico at the time – we had even MORE special memories.  We didn’t often have Christmas with family because my dad was in the Air Force and we were stationed miles away from them.  But during high school – while we lived in Washington state, my grandparents lived in New Mexico.

My grandmother was a preacher’s wife.  She was always giving away stuff to people in need – she was always so generous and loving.   And she ALWAYS had a pot of coffee on…

She & my grandpa drank coffee all day long – and when we’d hug or kiss – I’d get that whiff of coffee on their breath – and I think that’s when my love affair with coffee really began!  My grandma’s soft cheek mingling with the smell of fresh coffee – now THERE’S comfort!!!

My grandma’s house was often decorated in lots of beautiful and sweet and whimsical Christmas items, too – many of them gifts from friends and family (including the 3 of us kids).  She made Hard Candy, fudge, church window candy, date ball cookies, and we could eat our fill.  Like many grandmothers – she’d sneak us an “extra” of whatever it was we wanted – and grinned while she did it.

I can remember the last Christmas dinner we had with her.  She used her special china and let me set the table for everyone.  It was SOOOOO incredibly beautiful.  I was in awe of the lovely plates and dishes and she let me have my way making the table pretty.  We had these Christmas goblets and mugs that she collected from McDonalds (do you remember those?) and when we got to drink eggnog out of the goblets, it was BIG stuff!!!

There was more food than we could possibly eat, and again – even if we didn’t clean our plates, she was handing us sweets as we’d walk past her.  What a woman!

When I think about Christmas as a teenager – this Christmas with her was really very special to me.

So today I have MUCH due for my Algebra class.  It ends at midnight tonight and I am pushing upward and onward to get a “C” in the class.  It’s not looking good, but I can’t give up yet.

I got some cookies made this week – No Bakes (yummo!) and Monster Cookies.  I’m making a cheese ball (my grandma’s recipe) to take to my mom’s family reunion this weekend, barring any bad weather.  The drive is only an hour away, but Roy is on call and can’t go and I really hate the idea of being stranded on the side of the road with 2 girls should bad weather occur.  Needless to say – Cheese balls signal “holidays” to me for some reason, and I’m looking forward to spending time with uncles, aunts & cousins I usually only get to see once a year.  My grandpa will be there – and Curly can’t stop talking about seeing her “GrandPapa”…

I’ve been enjoying the heck out of my new Keurig brewer and already discovered my favorite K-cup:  Green Mountain Coffee’s Nantucket Blend.  I won’t admit to the number of cups I’ve had in less than 2 weeks, but needless to say, I’ll be a fan for life or until the blend is no longer available…  Oh – and Roy brought home a bottle of GFIC’s new holiday liquid creamer, White Chocolate Raspberry, which is DIVINE!  We couldn’t find any more bottles for an entire week, and then one night we came home and each of us had found a bottle at different stores. =)  So that has helped me get through the week and wrap up for my final!

Then it’s on to wrapping Christmas presents!!!  Thanks for visiting – have a great weekend!
